Trentino sparkling, made the same way as Champagne. Chardonnay-led, lightly creamy, mountain-fresh. Citrus, apple, pastry and a clean mineral edge.
The Balter family farms ten hectares on a hilltop at 350 metres, a few kilometres from Rovereto in southern Trentino. They have grown vines here since the mid-1900s and now focus on Trentodoc, the region's traditional-method sparkling. The family also makes a Rosé and a Riserva.
This Brut rests at least thirty months on its yeast lees before release. That slow rest is what builds the depth.
Open it as an aperitivo, or keep it at the table for oysters, fried fish, roast chicken or burrata. It is a bottle to drink often, not to save.
