About
Negroamaro from southern Puglia — dark, ripe, savoury, with that distinctive Mediterranean sun-baked character. Built for lamb and Sunday roasts.
Severino Garofano is the reason Negroamaro has a modern reputation at all. The oenologist backed the grape when most of Salento sold its fruit for blending, then founded this Copertino estate in 1995. His children Stefano and Renata run it today. From the 2021 vintage the wine carries the Salento IGP label, a nod to its home plain.
The vines grow in shallow clay over limestone and tuff, with stone close to the surface. The fruit macerates for at least five days and ferments at a controlled 29 degrees. It then rests two years in tank before release. It sees no barrel, which keeps the cherry, sweet leather and spice clear.
Give it an hour open before roast lamb or aged pecorino.
