Billy Button is winemaker Jo Marsh's label, started in 2014 in the Alpine Valleys of north-east Victoria. She built it around lesser-known grape varieties alongside the classics, and this fizz fits that pattern. Recent releases blend Durif, Saperavi and Shiraz, three dark grapes that keep the colour deep and the fruit generous.
If you have never tried sparkling red, expect a soft, juicy red with gentle bubbles and a little fine tannin underneath. Serve it straight from the fridge.
It earns a place at Christmas lunch too. The bubbles cut through glazed ham and roast duck, and it copes with chocolate dessert better than most reds do.
