About
Gary Farr's Viognier — among the best examples of the variety in Australia. A serious wine in every sense; for occasions, not casual pours.
The fruit comes off two blocks in the Moorabool Valley. The original house block went in during 1994, on friable red soil over limestone and sandstone. The second is younger, planted in red ironstone. Geelong sits cool enough that Viognier keeps its line, which matters because the grape turns broad and oily the moment it takes too much sun.
The Farrs pick early to hold the acid, then work for texture rather than weight. The fruit is foot stomped and given a short time on skins. That draws out phenolics and gives the wine grip instead of perfume alone, which is why it tastes structured where most Viognier tastes soft.
Serve it cool rather than cold. Roast chicken or pork.
