About
Mornington's cool climate gives Pinot Gris real texture and persistence — far from the watery PG cliché. Pear, stone fruit, ginger spice. Proper texture in a glass that usually has none.
The vines grow on old red volcanic soil at Merricks North, in the heart of the Mornington Peninsula. They are close-planted and cropped at roughly three tonnes a hectare, a lower yield than most Grand Cru Burgundy. Fewer bunches per vine concentrates everything the site can give.
The winemaking borrows white Burgundy logic. Hand-picked whole bunches go straight to the press, and the unclarified juice ferments in old French oak barriques. It then sits on its gross lees for about five months before bottling. That lees time builds the savoury, nutty edge you will notice on the finish.
Serve it cool rather than cold so the orange-blossom and green-apple side shows. Roast pork or a soft cheese finishes the job.
