The Drouin family are Calvados producers; this gin uses apple base spirit instead of grain. Fresh apple, citrus, subtle spice. More refined and gastronomic than London Dry.
Guillaume Drouin launched this gin in 2015 from his family's Calvados house in Normandy. More than thirty cider apple varieties go into it, spanning bitter, bittersweet, sweet, and tart. The apples are pressed in autumn, ferment slowly through winter, then get double distilled in small copper pot stills.
The botanicals follow the same logic. Drouin picked eight, and all but juniper come from the aromatic world of a good Calvados. Think ginger, vanilla, cinnamon, almond, and cardamom. Each one is distilled on its own, then blended fresh for every batch.
Try it first in a martini, where the apple character has room to speak. In a gin and tonic, go easy on the garnish.
