Walcher builds this gin from 23 botanicals, most grown organically around the distillery. The mix includes Sicilian cedar, Sicilian tangerine, juniper, coriander and angelica root, plus local flowers such as elderflower, lavender and chamomile. Alto Adige's near-280 sunny days a year and cool nights help those botanicals develop a stronger aroma before picking.
It is handcrafted and diluted with spring water drawn from high in the Dolomites. The gin is then filtered at room temperature rather than chilled, a choice made to keep the citrus character intact. It sits at 40% alcohol, a touch above the standard gin strength.
Alfons Walcher set up his first still at Turmbachhof, the family farm, in 1966. The farm was already nine generations deep in Walcher hands by then. Serve it as a gin and tonic. Walcher itself recommends Thomas Henry tonic to let the citrus and herbs come through.
