About

Bright acidity with soft texture and layered fruit complexity. From one of Australia's most respected wild-ale brewers.

The peaches come from Thornbrook Orchard in Nashdale, on the cool-climate edge of Orange. This batch used 430 kilograms of hand-picked, tree-ripened fruit, added whole to beer that had already spent time in barrel at the Marrickville brewery.

Wildflower ferments with yeast and bacteria collected from wildflowers rather than a lab strain. It then ages the base beer in barrel before the fruit goes in. This batch macerated and refermented with the peach for five months before bottling, where it finishes carbonating naturally rather than being force-carbed.

This vintage leans sweet through the mid-palate before a bright acid finish, with an oaky note picked up from the barrel. Pour it cool rather than fridge-cold and treat it like a wine at the table. Cheese, charcuterie or a fruit-forward dessert all work well beside it.
