Juicy yet structured — lifted acidity and gentle tannin from the fruit skin. Pours like a serious bottle of wine.

The plums come from Thornbrook Orchard in Nashdale, near Orange in the NSW central tablelands. This batch used 982 kilograms of whole, tree-ripened Ebony Sun plums, folded into beer already aged in barrel at Wildflower's Marrickville brewery.

The base beer ferments wild, with yeast and bacteria the brewery collects from flowers rather than a bought culture. Fruit and beer then macerate and referment together for five months before bottling, where it carbonates naturally in the bottle rather than being force-fed gas.

Skin contact from the whole plums is where the gentle tannin comes from, alongside the fruit's own acidity. Serve it cellar-cool in a wine glass rather than a beer glass. Share it around the table the way you would a bottle of red.
