About
Tintilla de Rota is an Andalusian grape almost lost — Luis Pérez has rescued it. Dark, structured, Mediterranean-savoury. A genuine rarity.
Albariza is the chalk that made sherry, and this is what it does with a red grape. The fruit comes off three separate pagos, Balbaina, Corchuelo and Carrascal, so three readings of the same white limestone go into the blend. Albariza holds the winter rain deep in the soil and reflects the Andalusian sun back up at the vine. That is how anything survives a Cadiz summer.
Picking happens by hand at night while the fruit is still cold. Most of it is destemmed, then the wine takes five months in older French oak before settling for over a year in concrete and steel. The oak is there for shape rather than flavour.
Decant it. Lamb or game, and never serve it warm.
