Gabriel Boudier has made liqueurs in Dijon since 1874, with the Battault family running the house since 1936. That pedigree shows in the method. Six botanicals are distilled one by one in the family's copper still, then blended: black olives from Nyons, juniper, coriander, sweet orange peel, angelica and iris.
Distilling the olives rather than steeping them keeps the saline, herbal side of the fruit. The nose leads with soft olive over juniper and citrus. The palate opens on fresh juniper, holds a quiet olive depth, and lands clean and dry at 40 per cent.
Stir it into the martini it was built for, with dry vermouth and no brine, since the gin brings its own. A tonic works too, and takes the drink somewhere savoury.
