Distillerie de la Salers has worked with gentian root since 1885. The house made its name on the Salers gentian aperitif, drawn from roots dug in France's Massif Central. This gin carries that signature into new territory.
Eleven botanicals go in, gentian among them. It is distilled slowly in a bain-marie in the house's historic stills, and the gentle heat keeps the aromatics fine. Citrus and cardamom lead the nose, juniper sits underneath, and the finish turns to pepper, ginger and a light gentian bitterness.
Pour it long with tonic and a strip of lemon peel. Keep the garnish simple. The botanicals do the talking here.
