About

Cerasuolo isn't a rosé in the usual sense — it's its own DOC, made from Montepulciano, with deeper colour and proper body. De Fermo's biodynamic 'Le Cince' is serious: dark cherry, plum, savoury, real structure. Pair it with lamb, not lettuce.

De Fermo's property at Loreto Aprutino covers about 200 hectares, with just 17 planted to vines at 320 metres above sea level. The name Le Cince comes from the cinciallegre, the small songbirds that live among the rows.

The winemaking leaves the fruit alone. Grapes are picked by hand into small baskets and ferment on wild yeast with no temperature control. The wine then rests around ten months on its lees in large barrels. Nothing is fined or filtered before bottling.

Serve it just cool rather than fridge-cold, and give it a proper glass. It has the grip to sit with grilled meats and rich pasta through a whole meal. A pale pink would give up by the entrée.

De Fermo is a biodynamic estate in Loreto Aprutino (Abruzzo), known for fresh, low-intervention wines. Cerasuolo means 'cherry-coloured' — it's a category in its own right, not a regular rosé.
