Hernö opened in 2011 as Sweden's first dedicated gin distillery. It sits in the village of Dala near Härnösand, on the High Coast of the Baltic. Everything is distilled on site in small copper stills.
The Old Tom starts from the same base as Hernö's dry gin. The distillers add an extra dose of meadowsweet to the still, then a small amount of sugar after dilution to 43 percent. The rest of the botanical bill runs juniper, coriander seed, fresh lemon peel, lingonberries, black pepper, cassia and vanilla.
The lingonberries and meadowsweet give it a honeyed, northern character you will not find in an English Old Tom. Reach for it when a dry gin reads too stern.
