Le Fou is a label from Boutinot, whose French winemaking team works across the Languedoc. The name means The Madman. It started with their Pinot Noir, on the theory that only a madman would chase fine Pinot in the hot south of France.
The rosé blends Grenache with Cinsault, the classic southern pairing for pink wine, and it is made fully dry. There is no oak and no complication, just clean fruit from warm vineyards.
Serve it properly cold. Pour it before dinner, or with a prawn salad or simple grilled fish. Buy it for drinking this summer, not for keeping.
