About
Ignimbrite is a volcanic rock — and the wine reflects its soil. Bright, mineral, herb-driven Orange Cab.
Orange's vineyards climb the slopes of Mount Canobolas, an extinct volcano that last erupted millions of years ago. Sites here run from 600 to 1100 metres, among the highest of any wine region in Australia, and that altitude keeps nights properly cold through a Central West summer.
The fruit is grown at Ikigai Farm, Elliot and Jackie Paradoxa's place in the Central Ranges. They farm organically and go further than the certification requires, skipping the copper and sulfur sprays most organic growers still use. Grazing sheep and cover crops build the soil instead.
Pour it with roast lamb, a steak or a hard cheese, and give it a few minutes in the glass before you start. It is not a wine that needs to hide at the table.
