Margaret River sits on ancient gravelly loam over ironstone and granite, ground that drains fast and forces the vines to work for a modest crop. The region sits between the Indian and Southern Oceans, and the sea breeze that rolls in every afternoon keeps the vines cool through a hot Western Australian summer. That swing between warm days and cool nights holds the acid and keeps the tannins fine rather than harsh.
Xanadu ferments with wild yeast and matures the wine in French oak. Whole-bunch pressing and lees stirring build texture without piling on new-oak flavour. The estate was planted in 1977 by Irish doctor John Lagan and has been run by the Rathbone family since 2005.
Decant it an hour before serving young, or leave it a few years in the cellar. Steak, roast lamb or a hard cheese all sit right alongside it.
