About
Citrus and stone fruit with that unmistakable flinty Sancerre minerality. Tight, precise, persistent — Sauvignon Blanc the way the French intend it.
The Chotard family has farmed vines around Crézancy-en-Sancerre for more than two centuries. Daniel Chotard came to wine after a career in teaching, and has now handed the domaine to his son Simon.
Simon farms about fourteen hectares where flint and clay meet Kimmeridgian limestone, the old chalky seabed under the best of Sancerre. He feeds the vines organic compost and ferments every wine on natural yeast, still a rarity in the appellation. Time on lees fills out the middle of the palate.
Goat's cheese is the textbook match, and for once the textbook is right. Oysters and simple white fish work nearly as well. Drink it over the next few years while the tension holds.
