Laiolo Reginin farms around the village of Vinchio, in the hills south of Asti at about 350 metres. This is the Monferrato, the heartland of Barbera, where the soils run to limestone and sand. The vines behind La Mora are more than thirty years old.
The family works organically, picks by hand and ferments with wild yeasts. The wine sees only steel, never oak, then settles in bottle for six months before release. Nothing gets added and nothing gets in the way.
The acidity is the point at the table. Open it tonight with a slow ragù, a tomato-heavy pasta bake or pizza straight from the box. No cellar required, no decanter either.
